Hydrating Watermelon Salad

INGREDIENTS: 

1 large english cucumber, sliced and quartered (keep the skins for the fiber!)

2 cups cherry tomatoes, halved (or other fresh tomatoes of choice)

1 cup cooked chickpeas (if canned, rinse and drain)

1 cup cooked black beans (if canned, rinse and drain)

½ medium, red onion, sliced

2 avocados, diced

1 cup cilantro, chopped

¼ cup olive oil

2 Tbsp lime juice

1 Tbsp lime zest

1 ½ tsp sea salt

1 tsp black pepper

  • Combine the cucumber, tomatoes, chickpeas, black beans and onion in a large bowl

  • In a small bowl, mix together the olive oil, lime juice, zest, salt and pepper

  • Pour over tomato mixture and toss to coat evenly

  • Add avocado and cilantro and toss lightly to combine
